Butter Beans Asparagus

Butter Beans Asparagus is a simple side dish of butter beans and asparagus tossed in olive oil, mild spices and sesame seeds. It can be served as a hot salad for winter.
Serves: 4
Cooking Time: 15 to 20 minutes
Ingredients
- 1 tablespoon of olive oil
- 2 cloves of garlic, chopped
- 600g of cooked butter beans
- 1 small red onion, chopped
- 300g of asparagus, chopped
- 1 tablespoon of sesame seeds
- 1/2 teaspoon of crushed black pepper
- 1/2 teaspoon of red chilli flakes
- handful coriander chopped
- salt to taste
- juice of a half lemon
Procedure
- In a saucepan, add a tablespoon of olive oil and heat it for a minute.
- Add the chopped garlic and saute` for a minute.
- Add the chopped onion and saute` until it turns translucent.
- Add the chopped asparagus along with salt and cook until it is crisp-tender.
- Add crushed black pepper, red chilli flakes, sesame seeds and saute` for a minute.
- Add the cooked butter beans along with chopped coriander and saute` for 2 to 3 minutes.
- Add the juice of a half lemon and turn off the flame.
Butter Beans Asparagus is ready to be served.
Notes
- Instead of asparagus, you could use broccoli, celery, cabbage or beans for this recipe.
- You could add spaghetti to this dish and turn it into amazing pasta.
