Butter Beans Asparagus is a simple side dish of butter beans and asparagus tossed in olive oil, mild spices and sesame seeds. It can be served as a hot salad for winter.

Serves: 4
Cooking Time: 15 to 20 minutes

Ingredients

  • 1 tablespoon of olive oil
  • 2 cloves of garlic, chopped
  • 600g of cooked butter beans
  • 1 small red onion, chopped
  • 300g of asparagus, chopped
  • 1 tablespoon of sesame seeds
  • 1/2 teaspoon of crushed black pepper
  • 1/2 teaspoon of red chilli flakes
  • handful coriander chopped
  • salt to taste
  • juice of a half lemon

Procedure

  • In a saucepan, add a tablespoon of olive oil and heat it for a minute.
  • Add the chopped garlic and saute` for a minute.
  • Add the chopped onion and saute` until it turns translucent.
  • Add the chopped asparagus along with salt and cook until it is crisp-tender.
  • Add crushed black pepper, red chilli flakes, sesame seeds and saute` for a minute.
  • Add the cooked butter beans along with chopped coriander and saute` for 2 to 3 minutes.
  • Add the juice of a half lemon and turn off the flame.

Butter Beans Asparagus is ready to be served.

Notes

  • Instead of asparagus, you could use broccoli, celery, cabbage or beans for this recipe.
  • You could add spaghetti to this dish and turn it into amazing pasta.
