Cucumber Tomato Pepper salad is a healthy salad and perfect as a side dish or on its own for hot evenings. The dressing is quick to make with not a lot of ingredients or spices.

Serves: 4
Cooking Time: 10 minutes

Ingredients

  • 1 long cucumber chopped, (you can skip peeling if it is organic)
  • 2 large tomatoes chopped
  • 1 bell pepper chopped
  • 1 tablespoon of fresh parsley or coriander chopped
  • 2 tablespoons of olive oil
  • 2 tablespoons of fresh lemon juice (adjust according to preference)
  • salt to taste
  • half teaspoon of crushed black pepper

Procedure

Dressing

  • In a small bowl add olive oil, lemon juice, chopped parsley, crushed black pepper and salt.
  • Mix everything well.

Salad

  • In a large mixing bowl, add the chopped cucumber, tomatoes and bell peppers.
  • Add the prepared dressing and mix everything well.

Cucumber Tomato Pepper Salad is ready to be served. This salad needs to be consumed immediately as cucumber and tomatoes will leave water after some time.
