Fried Rice is cooked rice tossed with vegetables, green chilli sauce and soya sauce. This is my dad's recipe.

Serves: 4
Cooking Time: 30 to 45 minutes

Ingredients

Green chilli sauce (Adjust according to spice preference)

  • 6 to 8 mild green chillies
  • 2 to 4 hot green chillies
  • 1-inch ginger chopped
  • 1/2 teaspoon cumin seeds
  • 1/2 teaspoon lemon juice or vinegar
  • a pinch of salt

Cooking Rice

  • 2 cups of matured basmati rice
  • 3 cups of water
  • 1 teaspoon cooking oil
  • a pinch of salt

Vegetables

  • A cup of chopped cabbage
  • 1/2 cup of chopped beans
  • 1/4th cup of chopped bell pepper
  • 1/4th cup of chopped carrot
  • 1 teaspoon of crushed black pepper
  • 2 tablespoon prepared or shop-bought green chilli sauce (adjust according to preference)
  • 1 tablespoon of soya sauce
  • 2 tablespoons of oil
  • salt to taste

Procedure

Green chilli sauce

  • Blend all the ingredients until a fine paste is achieved.
  • Add one tablespoon of water if required and blend again.

Green chilli sauce is ready.

Cooking Rice
Note: I have used an electric rice cooker for cooking rice, you could also use any saucepan or pot for cooking rice.

  • Rinse rice very well till the water runs clear of starch.
  • Add water, salt and oil to the washed rice. Mix gently and start cooking the rice.
  • As soon as the rice is done. Empty them in a large plate or bowl and let the rice cool down.

Stir-fried vegetables

  • In a wok or saucepan, add 2 tablespoons of oil and cook at high flame.
  • Once the oil has heated add the chopped cabbage, carrot and beans with a pinch of salt and crushed black pepper.
  • Cook for 6 to 8 minutes. Then add the chopped bell peppers and cook for 3 to 5 minutes. Make sure that the vegetables are still crunchy.
  • Add soy sauce, green chilli sauce, salt to taste. (Rice and sauce also has some salt so adjust accordingly)
  • Cook for 2 to 3 minutes.
  • Lower the flame and add the cooked rice. Mix everything well and cook for 2 to 3 minutes.

Fried Rice is ready. Serve them with extra green chilli or red chilli sauce if required.

Tips

  • Use matured basmati rice, the one used in this picture where 12 months matured basmati rice.
  • Add lots of vegetables for a crunchy flavour. My dad normally adds equal quantities of vegetables and rice.
  • Use two kinds of green chillies for making the sauce - mild and spicy. The mild one will give an amazing colour and the spicy one will give the flavour. You could also use green chilli sauce from any supermarket.
  • Normally, fried rice is made in a large wok if you don't have a wok you could use a saucepan with a flat base.

Notes

  • Apart from the vegetables mentioned in this recipe, you could also add spring onion, baby corn, mushroom, bean sprouts and celery stalks.
