Garlic Vegetable Rice

Garlic Vegetable Rice is quick to make rice recipe with any vegetables of your choice.
Serves: 4
Cooking Time: 15 to 20 minutes
Ingredients
- 1 tablespoon of butter
- 1 teaspoon of oil
- 5 to 6 garlic cloves, chopped
- 1/2 cup of beans, chopped
- 1/4th cup of bell pepper, chopped
- 1/4th cup of carrot, chopped
- 1/2 cup of corn kernels
- 1/2 cup of green peas
- 1/2 teaspoon of crushed black pepper
- 1/2 teaspoon of chilli flakes
- 1/2 teaspoon of dried oregano
- 3 cups of cooked rice
- a handful of coriander, chopped
- salt to taste
Procedure
- In a large pan or wok, add a tablespoon of butter along with a teaspoon of oil. Once the butter has melted add the chopped garlic and saute` until the raw smell of garlic is gone.
- Add chopped carrot, beans, peas and corn kernels along with salt. Saute` until vegetables are cooked but are still crunchy. This will take about 5 to 8 minutes.
- Add the chopped bell peppers, chopped coriander and saute` for 2 to 3 minutes.
- Add crushed black pepper, chilli flakes and dried oregano and saute` for a minute.
- Add the cooked rice and cook for a few minutes.
Garlic Vegetable Rice is ready to be served.
Vegan Options
- Use olive oil instead of butter
Notes
- Apart from the vegetables mentioned in this recipe, you could also add spring onion, baby corn, mushroom, bean sprouts, edamame or celery stalks.
- You could use left-over rice for this recipe as well.
