Halloumi Salad

Halloumi Salad is one of my favourite salads, hot and crispy grilled Halloumi with crunchy vegetables make it delicious and healthy.
Halloumi is a semi-hard cheese made with a mixture of goat's and sheep's milk, and sometimes also cow's milk. It is salty and has a high melting point so it can be easily grilled or fried.

Cooking Time: 15 to 20 minutes
Ingredients
For grilling halloumi
- 170 grams of halloumi, water squeezed out and chopped into slices
- 1/4th teaspoon of red chilli powder
- 1/2 teaspoon of black pepper powder
- 1/2 teaspoon of dried oregano
- 1/4th teaspoon of cumin powder
- 1 tablespoon of olive oil
- some olive oil to brush on the pan for grilling if required
For Salad
- 1 heart romaine lettuce (about 3 cups chopped)
- 1/2 small onion, thinly chopped
- 5 to 6 cherry tomatoes, chopped
- 1/2 bell pepper, chopped
- 1/2 cucumber, chopped
- 1/2 teaspoon of black pepper powder
- a pinch of salt (as halloumi is salty, just use a bit of salt)
- a teaspoon of fresh lemon juice
- a handful of coriander, chopped
Procedure
Grilled halloumi
- In a mixing bowl, add a tablespoon of olive oil, red chilli powder, black pepper powder, cumin powder and dried oregano. Mix everything well.
- Add the sliced halloumi to the prepared mix and leave aside for 5 minutes.
- Heat a pan. Once the pan has heated, grill the sliced halloumi until browned. This will take up to 2 to 3 minutes on each side.
- Brush some oil to the pan if required.
Grilled Halloumi is ready. It can be used in salad, but also a sandwich, burger or wrap filling.
Salad
- In a large mixing bowl, add all the chopped heart romaine lettuce, small onion, cherry tomatoes, bell pepper, cucumber, coriander.
- Add a pinch of salt, black pepper powder and a teaspoon of lemon juice.
- Mix everything well and add the grilled halloumi to the prepared salad.
Halloumi Salad is ready. Enjoy it immediately as tomatoes, cucumber and onions will leave the water after some time.
Vegan options
- You can use tofu instead of halloumi.
Notes
- Squeeze out the excess water of halloumi or tofu so that it is easier to grill later.
