Masala Oats is a quick healthy recipe, perfect for lunch or dinner.

Serves: 4
Cooking Time: 20 to 30 minutes

Ingredients

  • 1/2 cup of chopped carrots
  • 1/2 cup of chopped beans
  • 1/4th cup of corn kernels
  • 1/4th cup of peas
  • 1/4th cup of chopped tomatoes
  • 1/2 inch crushed ginger
  • 2 cups of oats
  • 4 cups of water (reduce or increase the quantity based on the desired consistency).
  • 1/2 teaspoon mustard seeds
  • 1/2 teaspoon cumin seeds
  • 5 to 6 curry leaves
  • 4 teaspoon oil
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon red chilli powder
  • 1 teaspoon garam masala or ground spices
  • salt to taste
  • 2 teaspoon coriander chopped

Procedure

  • Dry roast oats in a pan until they are golden brown. Keep them aside.
  • In a pan, add the oil and once the oil has heated, add the mustard seeds.
  • Once the mustard seeds crackle, add the cumin seeds and let them crackle. Then add the curry leaves and crushed ginger. Sauté until the raw smell of ginger is gone.
  • Add the carrot, beans and peas with a pinch of salt. Cook for 3 to 4 minutes. (Add a few teaspoons of water if required for vegetables)
  • Add the corn and cook for 2 to 3 minutes.
  • Add the tomatoes and cook for 2 to 3 minutes.
  • Add water and boil for 2 to 3 minutes.
  • Add the roasted oats with turmeric powder, red chilli powder and garam masala. Boil for 8 to 12 minutes or until the oats and vegetables are cooked.
  • Garnish with chopped coriander.

Masala Oats is ready. It can be enjoyed on its own or with yoghurt.
