Red Pasta is a tangy, spicy pasta and it tastes amazing with fresh tomatoes. I like to add a lot of vegetables to this recipe, you can add any vegetables of your choice and adjust the spice level accordingly.

Serves: 4
Cooking Time: 30 to 45 minutes

Ingredients

Sauce

  • 1 medium onion, chopped
  • 6 medium tomatoes, chopped
  • 4 cloves of garlic, chopped
  • 2 teaspoon of basil, chopped
  • 1 tablespoon of parsley, chopped
  • 2 red chillies, chopped
  • 2 pinches of crushed black pepper
  • 1 teaspoon of Italian-style herb blend
  • 1 tablespoon of whole wheat flour or all-purpose flour
  • 1.5 tablespoons of extra virgin olive oil

Boiling Pasta

  • 2 cups of penne pasta or your favourite pasta
  • 8 cups of water to boil pasta
  • 1/2 teaspoon of oil for boiling pasta
  • a pinch of salt for boiling pasta (optional)

Pasta with vegetables

  • 1/2 teaspoon of black pepper powder
  • 1/2 teaspoon of dry red chilli flakes
  • 1/2 teaspoon of Italian-style herb blend
  • 1/4th cup of chopped black or green olives
  • 1/2 cup of chopped broccoli
  • 1/2 cup of chopped jalapenos
  • 1/4th cup of corn kernels
  • 2 tablespoons of unsalted butter for tossing vegetables
  • 1/2 teaspoon of extra virgin olive oil
  • salt if required

Procedure

Boiling Pasta

  • Boil 8 cups of water in a pan with half a teaspoon of oil and a pinch of salt.
  • Once the water has boiled, add two cups of pasta to it and boil until pasta are soft.
  • Strain the pasta and keep it aside.

Sauce

  • In a saucepan, add 1.5 tablespoons of extra virgin olive oil.
  • Once the oil has heated, add chopped garlic, red chillies and saute` for a minute.
  • Add the chopped onion and cook until the onion turns brown. Onions must be well-cooked to avoid a strong flavour onion.
  • Add the chopped tomatoes, along with crushed black pepper, Italian-style herb blend, chopped basil and parsley.
  • Add salt to taste and cook until tomatoes turn soft.
  • In a bowl, add 1 tablespoon of whole wheat flour or all-purpose flour and add two tablespoons of water to make a slurry without lumps. (Add more water if required).
  • Add the prepared to the sauce and cook for 2 to 3 minutes.
  • Empty the prepared in a large plate and blend once all ingredients cool down. Add water as required.

Red Sauce is ready.

Pasta with vegetables

  • In a saucepan, add 1/2 teaspoon of extra virgin olive oil and two tablespoons of unsalted butter.
  • Once the butter has melted, add black pepper powder, red chilli flakes and Italian-style herb blend, saute` for a minute.
  • Add the chopped broccoli, corn kernels and saute` for 5 to 8 minutes.
  • Add the chopped olives and jalapenos and saute` for 2 minutes.
  • Add the prepared sauce and boil for 3 to 5 minutes.
  • Add the boiled pasta and cook for 3 to 5 minutes.
  • Add salt if required.

Red Pasta is ready to be served. Enjoy it hot.

Vegan options

  • Instead of tossing vegetables in butter, you can use oil.
