Tomato Spread is a homemade spread made with fresh tomatoes and garlic. It is perfect for sandwiches, toast and wrap.

Ingredients

  • 400 grams of tomatoes, chopped
  • 3 large garlic, chopped
  • a tablespoon of all-purpose flour or wholemeal flour
  • a tablespoon of oil
  • a teaspoon of black pepper powder
  • a teaspoon of red chilli powder
  • 1/2 teaspoon of red chilli flakes
  • a teaspoon of Italian-style herb blend
  • salt to taste

Procedure

  • In a blender, blend chopped tomatoes and garlic into a smooth paste.
  • In a pan, heat oil. Once the oil has heated, add a tablespoon of all-purpose flour or wholemeal flour. Whisk the flour using a wire whisk so that no lumps are formed.
  • Stir until the flour turns golden. Then add the tomato garlic puree. (You could filter the puree if you want)
  • Then add the crushed black pepper, red chilli powder, red chilli flakes, Italian-style herb blend and salt to taste.
  • Boil for 8 to 10 minutes or until it gets thick like a spread. Stir occasionally and start whisking if any lumps are getting formed.

Tomato Spread is ready, it can be used for sandwiches, toast and wraps. You can store this in the fridge for two to three days.
