My sister came up with the idea of Indian style spiced potato and cheese sandwich, this was a successful recipe in my family. I have used a sandwich griller for making sandwiches, if it is not available you can use a toaster or pan to toast bread slices and then add the filling and cheese.

Serves: 4
Cooking Time: 15 to 20 minutes

Ingredients

Filling

  • 2 cups of boiled and mashed potatoes
  • 1/2 teaspoon of mustard seeds
  • 1/2 teaspoon of cumin seeds cumin seeds
  • 1/2 teaspoon of finely chopped green chillies
  • 5 to 6 curry leaves
  • 1/2 teaspoon of red chilli powder
  • 1/2 teaspoon of turmeric powder
  • 4 to 5 coriander sprigs chopped for garnishing
  • 2 teaspoons of oil
  • salt to taste

Sandwich

  • 8 slices of wholemeal bread or white bread
  • 100 grams of mozzarella or cheddar cheese grated
  • 4 tablespoons of tomato spread or your favourite sauce.

Procedure

Filling

  • In a pan, add two teaspoons of oil. Once the oil has heated, add mustard seeds and let them crackle.
  • Then add the cumin seeds and let them crackle. Add curry leaves and green chillies. Saute` for two minutes.
  • Then add boiled and mashed potatoes, salt to taste, turmeric powder and red chilli powder.
  • Saute` for 6 to 8 minutes. Then add the chopped coriander.

Masala aloo filling is ready for the sandwiches.

Sandwich

  • Take two slices of bread and apply half a tablespoon of tomato spread or your favourite sauce.
  • Then add the prepared filling to one of the bread slice and a handful amount of grated mozzarella or cheddar cheese. Place the other bread slice on top.
  • Put the prepared sandwich in a sandwich griller and grill till it turns golden brown.

Aloo Cheese Sandwich is ready to be served. Enjoy it with your favourite sauce or spread.
